Hey guys - great to be back for another season of Blue Raider Football. You've talked about the rivalry and how heated these teams get when they play... that got me thinking about something spicy like Nashville Hot Chicken!

My first taste of Nashville Hot Chicken came in highschool at Hillwood back in the 80's before coming to the boro. Of course original Nashville Hot Chicken is deep fried in hot oil for a crispy battered coating with a sauce concoction brushed on. Made famous by Princes, and Hattie B’s and a growing number of eateries serving up Nashville Hot Chicken.


Tailgate Version

Unless you take your fryer to the tailgate there’s only three other options.
Buy some hot chicken and take it to the tail gate
Buy some fried chicken, take it to the tailgate and heat it on the grill while you coat it with the hot chicken concoction
Or, marinate some chicken strips, wings, drums, and thighs in a heat blend, grill them up at the tailgate and lather them up with the hot concoction!
What’s the common theme?? The Hot concoction! Here’s what you need.

  • 3 tablespoons cayenne pepper
  • 1 1/2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cup vegetable oil or butter - melted
  • A mess a chicken! Tenders, wings, thighs, drummies!

First – make two batches of the hot chicken concoction! For each one Whisk together cayenne pepper, brown sugar, chili powder, paprika, garlic powder and oil.

Place chicken in a gallon ziplock bag and pour one batch of the marinade over chicken. Refrigerate overnight.

Remove chicken from marinade and grill until done, 8 to 10 minutes. Slather on the second batch of marinade before removing from the grill.

Serve hot on a slice of white bread with slices of pickles on top!
